Scrambled Egg Sandwich

I came home the other night and started rattling off

ideas for dinner to my hubby. Out came a slew of Naw, doesn't really sound good, well maybe. You know how it is when you are hungry but nothing really sounds good. I was tired and didn't want to fix a huge dinner, not to mention that I hadn't taken anything out of the freezer to cook.....Then it hit me.

Scrambled Egg Sandwiches, easy and satisfying! And as soon as those words left my lips my husband was all over the idea.

15 minutes later we had dinner on the plates. Yum. But don't get me wrong. You don't have to have this for dinner. It is a great starter for your morning and it is just a base for tons of other things you can add. Here is how we made it.

I had four people at home that night so I broke 12 eggs into a bowl, added salt, pepper and a little bit of water to make the eggs fluffy.

While I was cracking eggs I had about two TBS. of butter melting in my pan.

After whisking the eggs together with the water, salt and pepper I dumped them into the pan.

I make sure to stir them often and do not overcook them. Leave them a little under done so they have room to finish cooking after you take them off the heat.

Meanwhile I took out the two pieces of bread for my sandwich and added a little mayo. I love mayo with eggs but I think you could also be creative and use pesto, sriracha or even ranch.

Next I placed some turkey one one side. ( I would have preferred ham but.... yep, you guessed it, still in the freezer)

Ohh....don't forget the eggs.

When your eggs are done to your liking, spoon a heaping amount on the other side of the bread and top it with your favorite cheese.

Make sure you have the cheese and the eggs touching so that the cheese melts.

Now you just have to decide what you want with it. Coffee, Milk or is it more like a soda night.

This is such a basic recipe but it can be tweaked in so many ways. For instance, how about toasting your bread, or adding lettuce and tomato...oooooooh and maybe some bean sprouts. Yum.
