Stuffed Zucchini

What a week. I am so tired but we start school tomorrow so I am also excited. I haven't had much luck with my garden this summer but it always seems to grow zucchini. So here is one of my favorite recipes...stuffed zucchini.

First you need a nice large zucchini so this is a great recipe for that zucchini that got a little out of hand and grew a little bigger than you expected.
First cut the ends off just a bit to get rid of stem then cut it in half lengthwise.

Now you need to core out the "boats" by scooping out the insides but be gentle not to go through your skin and make sure you leave a little flesh on the ends to hold the boat together.


I usually start boiling the boat to soften it. You don't have to but it takes longer to bake if you don't. Just start the water boiling and gently easy the boat down in it. It will start to soften so be careful not to rip it but it can bend.

After it is soften place in a cake pan and start of filling.
Start with browning your ground beef, make sure to salt and pepper it.

While the beef is cooking, chop up your onion and the zucchini that you have cored out It should be small pieces. The picture above is what I cored, it has to be in nice smaller pieces a little larger than your minced onions.

Once your burger is done add in your zucchini, onions, oregano, sugar, 1/2 tomato sauce an 1/2 mozzarella.

Now stuff the boats with your meat mixture. In a separate bowl mix the rest of your sauce, sugar and water together. Pour over your stuffed zucchini and bake for 15-25 minutes until tender. Sprinkle with leftover cheese and bake additional 5 minutes until melted.

Cut in portions and serve. I like serving with sour cream.

1 large or 3-4 small zucchinis
1 lb hamburger
1-1/2 cup. shredded mozzerella
1 cup tomato sauce
1 small onion
1/2 tsp oregano
1 tsp sugar
1/2 cup water
salt and pepper to taste
